P.S. I just got a shipment today of steel cut oats (from Amazon) what fun...thanks for sharing the info! My family love the recipes.

I also just made a HUGE pot of chicken stock due to your encouragement...hmmm...Grandma did know best didn't she? :)

The baked oatmeal smelled SO GOOD as it was baking this morning! Almost like cinnamon rolls, very enticing!

I enjoyed mine with a little butter on top, my husband added maple syrup to his (but said he'd try it with PB next time) and said it was "far and above better than yesterday's" but in all fairness I think the steel cut oats turned out the way they did because of my not using enough water to cook them.

We will be making baked oatmeal again. The Yummy Granola is in the oven right now to dry.

Camille, no I didn't know what I was getting myself into, but I am thankful for the distraction, it has been fun.

We did this! It was yummy! We added dried cranberries and glazed pecans. (glazed pecans do not really count as a healthy additions, but they sure were tasty!)

Our granola is drying in the oven right now.

Oh Michelle, why am I staining the deck, climbing ladders to clean sky lights, and dealing with rats in the attic instead of following all these wonderful tips? I do hope I can come back and do this ....

Hello again!

I had to make some adjustments to this due to my son's extreme sensitivity to milk. We don't even own a stick of butter, so I used a mixture of canola oil and applesauce. Now what to do about the yogurt, I wasn't sure. I mixed his up in a little ramekin with some added water and baked his portion separately. He didn't like it. But ours, we soaked it with yogurt and baked it up the next day--wonderful! Felt like having dessert for breakfast. I think the yogurt really gave it a good tang.

We made the rest into granola--it filled a glass 1.75 qt container! Thanks for the recipes and the videos!

don't know if you're going to have a separate post on the frittata and PB bars - but both were hits here! Even my husband, who does not eat eggs unless well-disguised (as say....cookies) ate the frittata and LIKED it. I added some crumbled sausage and chopped tomato - very yummy. The PB Bars this morning were like a peanut butter coffee cake - nice and light and delicious!

Looking forward to tomorrow, where all I have to do is SERVE the granola - no prep work! :-)
