I made one of my favorite side dishes tonight and wanted to share it with you. We had pot roast with all the fixins, beef, carrots and potatoes. I don't like to eat a ton of high carb veggies so I made this side dish for myself to go along with my beef. YUMMY!
I have adapted the recipe to my liking, you can find the original here. It is from Giada De Laurentiis, whom I really like. We have so much in common, we both are Italian, and we love to cook (She's a professional though, and gets paid a ton for it. That is where the similarity ends, I guess!)
Greek Caponata
•1 (28-ounce) can whole (or diced) tomatoes with their juice
•2 zucchini, cut into 1-inch rounds
•2 summer squash, cut into 1-inch rounds
•2 tomatoes, cut into wedges
•1 sweet onion, peeled and cut into 1-inch wedges
•3-5 garlic cloves, minced
•1/4 cup extra-virgin olive oil
•1 1/2 teaspoons salt
•1 teaspoon freshly ground black pepper
•1 teaspoon dried oregano

Lots of Pecorino Romano Cheese!
Directions
Preheat the oven to 400 degrees F.
Pour the canned tomatoes into a 9 x 13 baking dish and spread to cover the bottom. Put all the veggies over the tomatoes. Drizzle with olive oil, salt and pepper and oregano. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake until the edges of the vegetables are golden, about 30 to 40 minutes.

Oh that looks yummy. I wish I could eat squash, but it gives me tummy aches. I am so ready for grilled garden veggies though! Yum!!!
This sounds like something I would LOVE! I can't wait to try it! I LOVE all Italian food too! My Mom has many authentic Italian recipes that we grew up on! Unfortunately, I am now trying to drastically reduce the amount of pasta I eat. Otherwise, I could eat it every night of the week! ;)

Yes, this looks and sounds delicious. Just reading it, I can almost taste it. These are all ingredients I love, so I will be making this soon! Thanks. And thanks for the reminder that there's a difference between carbs and carbs. :-) I actually know that, but just haven't been doing a good paying attention to it lately.
Sounds so yummy! I do something similar to this with all my garden produce in the summer, but I stir fry it. So GOOD!
