My husband and I had our steel cut oats. I used 3 cups, covered with water, added a bit of lemon juice, and soaked in the fridge overnight (should this have been done at room temp?)
I poured off the water, added about an inch of water to the pan, and cooked while stirring on high until it started bubbling, then turned it down and let it simmer for about 10 minutes more. It was chewy!
Perhaps soaking didn't happen for long enough? (from about 6:30pm to 5:30am) Maybe I didn't add enough water when I cooked them? Anyway, my jaw has had a workout!
I enjoyed the butter and honey flavor. My husband said it would probably be good for somebody who already liked oatmeal and ate it a lot. For him, he said it would be something to eat if he was really hungry.
When my daughter wakes up (she's not quite 2) I'll reheat some leftovers in the microwave and add plenty of water, maybe that will soften the texture up some. She is always hit or miss on foods, sometimes she will eat them up hungrily, other times the same food she loved last week she'll turn her nose up on this week, so we'll see how she does!
Did you cover the soaked oats with water or just add an inch of water? I can go back and look, I hope I said cover it, about an inch over the oats. Yikes. We cover the oats the next morning and simmer for about 10 minutes.
I do think it might be the not enough water, sometimes, if I have not added enough I will add boiling water if they are not tender enough.
Also, maybe for your husband finding the right flavor profile might be the challenge. I don't like honey, I like maple syrup, really I love brown sugar, but that is not as good for you. ;-) I also put cinnamon in mine. Give him props for trying it though!

I covered them with water in a crockpot, added sea salt and cinnamon. My husband adds a bit of sugar and takes it to work (he leaves really early in the a.m.). The children and I add natural peanut butter to ours with a small amount of brown sugar. It was delicious and I think soaking it with lemon juice and water improved the flavor. Most importantly, I'm hoping it got rid of all the phytic acid. Was seven hours long enough of a soaking time? Thanks for the instructions.
We did it! Actually, my daughter (eight years old) did it. She's our breakfast maker. I've been meaning to teach her about soaking grains, so this was perfect.

Okay, I confess, I haven't bought my steel cut oats yet. I am still using old fashioned Mother oats ... but I will be back to enjoy your posts.

Hi Cherry! YEAH! Any time you can soak them is good, and I think I read somewhere that 7 hours is the minimum, so you did great!
