Breakfast Challenge: Leftover PB Bars

This recipe uses up the leftover, cold and slimy oatmeal that you went through the trouble of seeking out organic steel cut oats, soaking your precious oats, and then cooking them. I found this recipe at Seeking the Old Paths.


Leftover Peanut Butter Bars

2 cups leftover oatmeal, cold and slimy is fine

1/2 cup butter, softened (coconut oil is also yum)

1 cup sweetener…sugar, sucanat, etc….

1 egg
1 cup whole grain flour…wheat, spelt, etc….(Yes, these work with rice flour if you need!)

1/2 tsp. baking soda

2/3 - 1 cup peanut butter (the original recipe calls for1/3 cup)

1 tsp. vanilla

Cream butter, sweetener and eggs in a bowl. Add oats and other ingredients; mix well. Spread into greased 9×13″ baking pan. Bake at 350′ for 10-15 minutes. Cool on wire rack; cut into bars. Yield 18(small) servings.
We ALWAYS double, triple or even quadruple this recipe, depends on how much cold, slimy oatmeal we have collected over the week.;-)
We bake it on 1/2 sheet pans. Like I said, we usually make a ton of this. We love it for breakfasts and snacks or just munching on all day if nobody puts it away and it just sits on the counter!
We have also served this hot, scooped into bowls with cold milk either on top or in a glass beside. It is so yummy for breakfast. The texture seems to be a bit different each time we make it.

  1. Wonderful! I just happen to have a pint of leftover hot cereal (a mixture of steel-cut oats, quinoia and rolled barley) in my freezer. I'm going to pull it out and try this recipe. My husband loves peanut butter! Thanks.

  4. Wow. This is really good. Very moist and tasty. I'm always at a loss with what to do with the leftover oatmeal, besides feed it to our chickens. They love it, of course, but I'd rather nourish the children! Thank you for the recipes! I'm going to try turning baked oatmeal into granola next... brilliant! :)

    Just wanted to let you know that I made these (again!) and added a few Tbs. of blackstrap molasses - trying to boost iron levels - and a generous dump of cocoa powder. Voila, breakfast brownies! :-)
    Sorry I didn't measure. I made a double batch, and used about 1/4-1/3 cup of molasses, and probably about 1/2-2/3 cup cocoa powder.
    Rave reviews from the kids and momma!

  8. I made these today and mine turned out very moist, more like a cake. I used fresh hot/warm oatmeal so I wonder if that made a difference. I will try these again but will add some dry oats just for texture. Thanks for the recipe.

  9. I just found the recipe you have the link for on another blog Feeding the Crew and I see now what happened to my bars! lol the honey should have been half of the amount or add in more flour. Live and learn. These won't go to waist though, still eating them anyway.

  10. Just made these and they were very tasty (especially with the apple and raisin bits we always have in our oatmeal) but didn't hold together to be a "bar." We had to eat 'em out of a bowl with a spoon - yummy, but not the "on the go" treat I was hoping for. Any suggestions?

    Love these! Day before yesterday we made a batch just this way and then, since we had TONS of leftover oatmeal and since I tweak compulsively, we made a batch flavored with 3T of carob powder instead of the peanut butter. This batch also had 1/2 cup of coconut flour instead of regular flour. It was REALLY good! I'm contemplating doing something with molasses next time.

    I've been making baked oatmeal for a few years and had recently been wondering if I could dry it out and make cold cereal...so I was excited to find your post on just that. I also dried out the leftovers of the leftover (!) Peanut Butter and Carob bars. That's really good, too!
